Uses thin oil and flour coating instead of batter. Requires 1 pound skinless fish cut ½-¾ inch thick. Coating combines egg, water, cornmeal, salt, and pepper. Cooks 3-4 minutes per side until golden brown. Can be served with lemon and homemade tartar sauce
Steak: Rare at 54°C, Medium Rare at 58°C, Well Done at 70°C. Roast: Rare at 56°C, Medium Rare at 60°C, Well Done at 70°C. Pork: Chop at 62°C, Roast at same temperature as chops. Chicken: Light meat at 65°C, Dark meat at 75°C
Kingfish steaks are coated with garlic, ginger, turmeric, lemon juice and salt. Cooked in hot olive oil for 2-3 minutes per side. Can be served with caramelized onions and tomato sauce. Leftovers should be refrigerated for up to 3 days
