    Kokoreçe "kokoreç" isminin verilmesinin nedeni, Rumca "kokoras" (çoban) kelimesinden türemiş olmasıdır. Kokoreç, Osmanlı İmparatorluğu döneminde genellikle Rum ve Ermeni ustalar tarafından yapılmıştır. Kokoreçin isminin kökeniyle ilgili başka bir iddia ise, ilk kokoreç tarifinin 1894 yılında Ayşe Fahriye tarafından yazılan ve Osmanlı dönemine ait ikinci basılı yemek kitabı olan “Ev Kadını” isimli yemek kitabında yer almasıdır. Kokoreçin, Bizans, Büyük Selçuklu ve Osmanlı mutfaklarının ortak bir lezzeti olduğu da düşünülmektedir.
